Perfect Popcorn, from Scratch

When we were kids, there were three kinds of popcorn: Jiffy-Pop ™, movie theater, and the kind Dad made for us.

Because the Jiffy-Pop ™ cost too much, we didn’t get that too often. And movie popcorn was just too darn expensive, even then.

But the kind Dad made was always good, even if it always needed more salt than Mom let us have.

So, here’s a good version of the old-fashioned Perfect Popcorn Recipe that we enjoyed back in the day.

But these days, everyone likes the microwave version. Which may not be quite as expensive as Jiffy-Pop ™, but it’s still a lot of money for what turns out to be mostly air and corn kernels and oil.

So, here’s Alton Brown’s recipe for homemade microwave popcorn. Of course, you can customize it all kinds of ways mostly by using assorted types of salt, grated cheese or other seasonings to spice things up.
